Keeping your SBS as "factory-fresh" as possible has to be better than shoehorning more stuff onto it (especially when doing so involves moderately complex whitepapers!). Regarding the 32-bit/64-bit issue, you need WSS3 x64 to run it on a Windows Server x64 box. Just pick that from the download page.
